Copycat Chili’s Cookie Skillet
This recipe is one our favorite desserts! We love going to Chili’s and grabbing the cookie dessert. It’s warm, cold, crunchy and creamy, it has everything you want in a sweet treat! The smell when the cookie comes out is delightful. Comfort food in a skillet. Containing a melty, crunchy cookie topped with a scoop of ice cream. Dig into it with a spoon and you won’t be disappointed! Instead of splurging on the pizookie next time you’re at Chili’s or perhaps BJ’s Restaurant and Brewhouse, make your own at home anytime! Enjoy!
Chili’s Skillet Cookie Ingredients
- 1/3 cup Butter
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1 tsp Vanilla
- 1 Egg
- 1 1/2 cup Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Chocolate Chips
You will need a smaller cast iron skillet. I recommend this highly rated 8-inch pre-seasoned cast iron skillet with over 20,000 positive Amazon reviews! It has a handle, but does NOT come with a cast iron handle cover.
If you want one with a head resistant hand sleeve, consider this set of three cast iron skillets or this set of one preseason cast iron skillet with handle cover. Either work fine. An 8 inch round pan is fine too!
Chili’s Cookie Skillet Directions
The recipe is incredibly easy. Worth the time it takes for this tasty perfection!
- Preheat oven to 350.
- Place small skillet or 8″ round pan over low heat and melt butter.
- Add sugar, brown sugar, beaten egg and vanilla. Mix well.
- Add flour, baking soda and salt. Mix until well blended.
- Add in chocolate chips and stir to evenly distribute.
- Bake 15-20 minutes or until golden brown.
- Allow to cool 10 minutes.
- Cut into slices and top with vanilla ice cream.

- Total Time: 30 minutes

I have tried to make this recipe twice now and im not sure if the dry ingredients is too much or not enough. Both times I got a bowl of a mess.. I followed the recipe correctly and I just don’t understand why the cookie dough won’t form.

Wow! it has everything you want in a sweet treat! The smell when the cookie comes out is delightful. But you know what? I skipped the butter part and used ghee in it. And the result turned out to be a superhit! You can also try it with Milkio ghee without thinking twice,it’s pure and organic.

Can you double the recipe and use a 10 inch iron skillet??

Of course! I would increase the cooking time by at least ten minutes if you double the cookie skillet recipe. However, I think it actually would be wise to not double the recipe and rather add this original ist of cookie ingredients to a ten inches skillet. Then reduce the cooking time by approximately 8 minutes. Just monitor as each oven will vary in baking time.
