Easy White Chicken Chili Dump Dinner
I am a lazy chef but I have rich taste. Most of my meals are one pot dinner or slow cooker meals. As my number of children has increased (we have five), my cooking style has become even more tactical. Cans, stockpots, instant pots, whatever makes our life easy and home simple. To explain a real life scenario of my kitchen, this was my twins when I didn’t get breakfast on the table fast enough. They were resourceful (and hungry!)
Speaking of the twins, I often look for meals that they can enjoy with us. We are at a stage where purees are out the door and I need to make hearty meals that include them. I am not into making multiple dinners, so I always try to incorporate flavors and appropriate sized food they can pick up and enjoy without me having to hand feed them.
One of the things I often grab for the twins are canned veggies and beans. I will mix in rice or seasoning and warm them and place them straight on their high chair tray. It is always nice when that canned “meal” is flavorful. They are getting so picky about bland food! By already having flavor in the can, it eliminates my prep time and makes for easier dump dinners.

OPTIONS: If you can’t find BUSH’S® Chili Beans (yellow can), go for BUSH’S® Pinto Beans (blue can) like we did in the recipe below. You can consider eliminated some of the added spices and chiles if you go with that option.
White Chicken Chili Dump Dinner Ingredients:
- 2 cooked and shredded chicken breasts
- 4 cups chicken stock
- 2-16oz cans BUSH’S® Chili Beans (yellow can) or BUSH’S® Pinto Beans (blue can)
- 1-4oz can diced chiles
- 1 cup frozen corn
- 1 1/2 cups white cheddar cheese
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons dried cumin
- 2 teaspoon dried oregano
- 1 tablespoons onion powder
Don’t Forget the Garnish:
- Cilantro, washed
- Lime wedges
- Tortilla chips
Easy White Chicken Chili Dump Dinner
Ingredients
- 2 cooked and shredded chicken breasts
- 4 cups chicken stock
- 2–16oz cans BUSH’S® Chili Beans (yellow can) or BUSH’S® Pinto Beans (blue can)
- 1–4oz can diced chiles
- 1 cup frozen corn
- 1 1/2 cups white cheddar cheese
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons dried cumin
- 2 teaspoon dried oregano
- 1 tablespoons onion powder
Garnish:
- Cilantro, washed
- Lime wedges
- Tortilla chips
Instructions
Boil raw chicken breasts until cooked through. Drain water (or use later for chicken stock) and move cooked chicken to a bowl.
Shred Chicken with a hand mixer or with a fork.
Place garlic in large stock pot and heat for about a minute.
Add cooked shredded chicken to the pot.
Mix in chicken stock, canned beans, green chiles, frozen corn and spices.
Bring to a boil on medium to high heat.
Allow to slow-simmer until you are ready to eat.
Once you are ready to eat, stir in cheese until melted.
Scoop into a bowl and garnish with cilantro and a lime wedge.
Serve with tortilla chips.
White Chicken Chili Dump Dinner Directions:

Note: If simmering for a longer period of time, add BUSH’S® Beans in at the last minute and cook until warm.
Leftovers are great. My favorite way to eat this the next day is drained and over greens. It makes a perfect salad!
