Morning Egg & Asparagus Breakfast
Rise and Shine! This dish will change the way you look at vegetables in the morning. A fried egg atop a bed of delicious asparagus, drizzled with sauce is just what you need to get your morning going. Asparagus is loaded with fiber, folate, vitamins A, C, E and K combined with the protein of an egg, you’ll be off to a great start! We might suggest (if you are not watching carbs) you add an english muffin or consider bacon.
Ingredients:
- 4 to 5 Stalks of Fresh Asparagus
- 1 tbsp Butter
- 1 Egg
- Salt and Pepper
Directions:
- In a small skillet add in stalks of asparagus and a little bit of water to softened the stalks
- Once softened remove the asparagus and place on a plate.
- Leave remaining water in the skillet, add in 1 T of butter. Stir constantly and make sure it foams up a bit. Don’t let it burn otherwise it’ll have a funny taste. The foaming is what will help the sauce thicken up. As you are stirring add in desired amount of salt and pepper.
- Once sauce has thickened you can pour it onto your asparagus or you can add it to a bowl and wait to pour it over the fried egg.
- Fry up the egg in the skillet and then place on top of the steamed asparagus. If sauce hasn’t already been poured go ahead and do so now.
- Enjoy with a glass of cold orange juice.
