Bush’s Black Bean Salsa with Avocados
You know I am a southern girl and I love my college football. When I was in college, at Florida State University, I actually worked with the football team showing new recruits and their family the campus. It as a pretty cool gig and holds a lot of memories. Post college, most of my memories include tailgating at FSU. My family and friends would arrive hours before the game and we would bring food, hook up televisions and the day would be filled with pre-game chatter and excitement. Since moving to DC, tailgating has become a memory. We are no longer backing trucks into fields, hanging up large flags, or gathering under tents with fold and go chairs. In fact, most of our friends (in this area) love NFL games so we have learned to adapt enjoying a Redskins game or two. In order to relieve some of these traditions, I will make a few side dishes and appetizers and we will “tailgate” on our couch. Our black bean salsa is a family favorite and a good excuse to down a lot of chips (the healthy way – wink, wink!)
One of my favorite secrets about cooking with beans are canned beans. I am not someone who buy the hard beans and goes the long way of soaking them, cooking them, and then serving them – it’s just too much work! Bush’s Beans are a great addition to game time snacks, like Bush’s Black Bean Salsa with Pineapple.
Salsa Ingredients:
- 1 15oz can Bush’s black beans
- 1 avocado, sliced
- 1 cup frozen corn
- 1 cup fresh cherry tomatoes
- 1/4 cup cilantro, chopped
- 1/4 cup red onion, diced
Dressing Ingredients:
- 1/4 cup fresh lime juice
- 1 1/2 tablespoons liquid Sugar in the Raw (can substitute honey or agave nectar)
- 1 1/2 tablespoons extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Directions:
- In a large mixing bowl, combine your lime juice, liquid sugar in the raw, EVOO, garlic powder, chili powder, salt, and pepper.
- Wash and slice your tomatoes, red onion and avocado and add to your dressing along with the corn.
- Wash and chop your cilantro and add to your dressing.
- Rinse your black beans, add to your dressing mixture and toss gently with a spatula until well mixed.
- Serve with tortilla chips and enjoy!
