This Quick & Easy Cheeseburger Soup recipe is so comforting on a cold winter day. Even if your household doesn’t like cheeseburgers they’ll probably enjoy it. It’s one of my family’s favorite meals.
Ingredients:
- 1 pound ground beef
- 1 small onion, chopped
- ½ cup shredded carrots, shredded
- 3 stalks celery, diced
- 3 cups chicken broth (or chicken stock)
- 2 cups shredded sharp cheddar cheese
- ¼ cup Parmesan cheese
- 2 cups milk
- 3 cups potatoes, cubed (russet potatoes are great!)
- 1 teaspoon parsley
- 1 teaspoon basil
- 2 teaspoons garlic salt
- ¼ cup flour
- 5 tablespoons butter
Directions:
For a quick prep time, use precut celery, carrots, onions, and potatoes. Alternatively, you can spend about 10 minutes chopping up your ingredients.
Place 2 teaspoons of butter in a large pot (or large Dutch oven) and melt over medium heat, stir in onions and sauté until they start to become translucent.
