- 1 medium spaghetti squash
- 1 C. cooked shredded chicken
- 3/4 C. cooked spinach, chopped
- 3/4 C. grated Parmesan cheese + extra to sprinkle on top
- salt & pepper
Instructions
- Slice the spaghetti squash in half short ways and remove the seeds. Place in a microwave safe dish filled with 1-2″ of water and heat for 20 minutes in the microwave.
- Preheat the oven to 350 degrees.
- Remove the squash from the microwave and let cool a bit. Gently scrape the squash from the shell.
- Combine the cooked chicken, squash, spinach and grated Parmesan cheese and salt & pepper in a bow. Mix.
- Place the ingredients in a casserole or baking dish.
- Sprinkle extra Parmesan cheese on top.
- Bake for 20-25 minutes.
- Serve with a salad or vegetable.
