Sam’s wants to kick off summer with creative recipes and baskets for your summertime fun! Sam’s Club simplifies meal planning by providing easy recipes, great outdoor items.
Sam’s Club has put together some GREAT recipes that I wanted to share with you below.
Blackberry Lemonade Cocktail
Serves 10
- 3 cups vodka
- 6 cups Members Blackberry flavored lemonade
- 2 cups pineapple juice
- Lime wedges for garnish if desired
- 4 cups ice
In a drinks dispenser filled with ice, pour vodka, blackberry lemonade, and pineapple juice. Mix well and serve.
Potato Pouches
- 2 sheets aluminum foil
- 2lbs. red bliss potatoes
- ½ cup olive oil
- 3 tbsp. Dijon mustard
- ¼ cup fresh dill chopped
- ½ tsp. salt
- ½ tsp. freshly ground pepper
In a small bowl mix together olive oil, mustard, dill, salt and pepper. Lay a sheet of foil on counter.
Rinse potatoes and cut in quarters lay them on the bottom sheet of foil. Pour marinade evenly over potatoes, coating well. Place second sheet of foil on top of potatoes. Gather the top and bottom pieces of foil and starting on one side, fold over the edges twice towards the center, continue until all the edges are turned. This creates a pouch for cooking the potatoes. Place foil pouch directly on the grill. And cook for 15-20 minutes until potatoes are crispy and browned.
Corn salad
- 2 tbsp. lime juice
- 3 tbsp. white vinegar
- 3 tbsp. chopped fresh cilantro
- ½ tsp. salt
- ½ pepper
- ½ cup olive oil
- 3 cups fresh corn kernels
- 2 cups black beans
- 1 cup diced tomatoes
- ½ cup chopped green pepper
In a mixing bowl, whisk together lime juice, vinegar, salt, pepper and olive oil. Add the corn, beans, tomatoes pepper, and cilantro. Toss well and serve.

I love BLT dip. Its just a jar/package of bacon bits, one reg. size can of diced tomatoes, drained and juice gently squeezed out, and 1/2 cup sour cream and 1/2 cup mayo. Easy and you can dip it with corn chips, spread it on a tortilla and add lettuce. Our family loves it.

heres and fun and easy summer party appetizer! cut pine apple in quarters, slice off the core, cut the fruit away from the hard part of the pineapple and leave in the pineapple “shell” place all quarters in a dish when you are done. for each quarter, slice down the middle and chop width wise down each quarter (looks like cubed) stick tooth picks in about every other slice and top with maraschino cherries. (my kids love this and as me to bring it to all parties)

My favorite summer recipe is for a super simple cake that has been passed down in my family.
White cake baked in a 9×13 pan, sliced in half lenthwise. Mix 8 oz of cream chees with 1 cup powdered sugar, spread on top of first layer, pour strawberries in syrup over the cream cheese, place second layer of cake, pour strawberries in syrup over that layer and top with cool whip. Soooo yummy!

Cucumber Salad
Ingredients
1-1/2 cups thinly sliced cucumbers
2 tablespoons sour cream
2 tablespoons ranch salad dressing
1 green onion, chopped
1 teaspoon minced fresh parsley, divided
Directions
Arrange cucumbers on a serving plate. In a small bowl, combine the sour cream, ranch, onion, 1/2 teaspoon parsley. Spoon over cucumbers. Garnish with remaining parsley.

I look forward to that time in summer when the tomatos start to get soft enough and right before they turn red to make fried green tomatos. Fried with a cornmeal and flour mixture.

Nothing screams summer more than rhubarb slush punch!
6 cups of chopped rhubarb
7 cups of water, divided
2 cups of sugar
3/4 cup of orange juice concentrate
3/4 cup of lemonade concentrate
Bring the rhubarb to boil in 4 cups of water. Reduce heat, simmer uncovered for 5-8 minutes until the rhubarb is tender. Mash the rhubarb and strain. Save the juice from the rhubarb. Add the remaining water, sugar and concentrates. Mix together and freeze.
When you want to eat it, take it out of the freezer and let it thaw a little bit so that you can scrape it into slush. We put Sprite or 7-up over it.
It’s refreshing and delicious!!

“Pistachio pudding mix is the base for this marshmallow salad with pineapple, nuts and fluffy whipped topping.”
Ingredients:
1 (3.4 ounce) package instant pistachio
pudding mix
1 (8 ounce) can crushed pineapple, with
juice 1 cup miniature marshmallows
1/2 cup chopped walnuts
1/2 (8 ounce) container frozen whipped
topping, thawed
Directions:
1. In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts. Fold in whipped topping. Chill.

I love to make some red skinned potato salad:
2 pounds clean, scrubbed new red potatoes
6 eggs
1 pound bacon
1 onion, finely chopped
1 stalk celery, finely chopped
2 cups mayonnaise
salt and pepper to taste
Boil potatoes until tender, cool in fridge.
Make hard cooked eggs, cool, peel, and chop.
Cut bacon and cook in skillet, till browned.
Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.

A fun summer recipe I make for my kids is “pickle cicle pops”. Instead of dumping out that pickle juice from pickles, add water to it (50% pickle juice to 50% water) and pour into ice cube trays. Cover with plastic wrap and poke a toothpick in each or popcicle stick. Once frozen they are a tangy pickle flavor frozen treat for the kiddos.

One of my favorites is a pasta salad with feta (and I’m not normally a fan of pasta salad). This one starts with hot, cooked pasta. Add a wonderful garlicky lemon vinaigrette. Dump the warm mixture into a bowl of raw fresh spinach, chopped tomatoes and a can of drained chick peas. Sprinkle with lots of feta and cracked black pepper. Yum!

My favorite summertime recipe is Watermelon Granita – 4 cups cubed watermelon, 1/2 cup sugar, juice of 1 lemon. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups.

Greek Pasta Salad
a.. 1/2 cup olive oil
b.. 1/2 cup red wine vinegar
c.. 1 1/2 teaspoons garlic powder
d.. 1 1/2 teaspoons dried basil
e.. 1 1/2 teaspoons dried oregano
f.. 3/4 teaspoon ground black pepper
g.. 3/4 teaspoon white sugar
h.. 2 1/2 cups cooked rotini pasta
i.. 3 cups fresh sliced mushrooms
j.. 15 cherry tomatoes, halved
k.. 1 cup sliced red bell peppers or roasted red peppers
l.. 3/4 cup crumbled feta cheese
m.. 1/2 cup chopped green onions
n.. 1 (4 ounce) can whole black olives
o.. 3/4 cup mini pepperoni rounds
Directions
1.. In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, green onions, olives, and pepperoni. Toss until evenly coated. Cover, and chill 2 hours or overnight.

Strawberry cookies
1 box strawberry cake mix
1 egg, lightly beaten
1 (8oz) container cool whip, thawed
2 C confectioners sugar
In a mixing bowl, combine first three ingredients. Place confectioners sugar in a shallow dish. Drop dough by tablespoonfuls into sugar, roll around to coat. Place 2 inches apart on greased baking sheet. Bake at 350 for 10-12 min or until lightly browned around the edges. Remove to wire rack to cool. (Can substitute lemon cake mix.)

I love a cool, refreshing cornbread salad in the summer. You basically layer your favorite cornbread, crumbled up and on the bottom of a baking dish. Then a layer of 1/1 sour cream and mayonnaise, a layer of minced onion, a layer of minced bell pepper, a layer of minced tomato, a layer of corn, shredded cheddar cheese and crumbled some bacon on top. It’s so delicious.

I love making bacon wrapped shrimp on the grill. I add in a chunk of pineapple in the center of the shrimp before wrapping. It gives it a great refreshing pop when you bite in and the saltiness from the bacon…it’s sooo good! :)

I like to make cake infused with Jello. All you need is a box of cake mix (regular yellow or white cake mix), and a box of Jello mix (my favorite to use is strawberry, but any flavor is fine). Follow instructions on cake mix box and bake. Then make the jello, but don’t refrigerate it. After the cake has baked poke it throughout with a fork and then pour jello over the cake. Cover with cool whip. This make a delicious and fun cake for summer.

My favorite go-to summer dip is peach salsa dip. In a pie plate, spread a block of cream cheese in the bottom, top it with a can of black beans (I rinse before I use them), a can of Newman’s Own peach salsa (or any other peach/mango salsa works), and finish it off with a top layer of mexican shredded cheese. Pop it in the oven for about 30 minutes at 350 – or until bubbly. Serve with tortilla crackers. Yum!

We make something similar to the potato packets but use red potatoes, diced chicken breasts, cube up a block of cream cheese, sliced onion and French’s Fried Onion rings. Put first 4 ingredients in packet, grill or bake until chicken is done, then top it all with fried onion rings. Delicious and kids will even eat it!
Another of our favorites is good ol’ pigs in a blanket, served with cold watermelon slices. Perfect by the pool!!
