- 2–3 eggs
- 1 tablespoon milk or water
- 2 tablespoons Kalamata olives
- 2 tablespoons tomatoes, diced
- 1 tablespoons red onions
- 3 tablespoons shredded feta cheese
- Salt and pepper
Instructions
- Spray the inside of your mug with a non stick cooking spray.
- Pour your eggs and milk into your mug, season with salt and pepper and whisk with a fork until combined.
- Mix in 2 tablespoons of your feta cheese and all of your tomatoes, olives, and onions.
- Microwave on high for 2-3 minutes or until your eggs are cooked thoroughly.
- Sprinkle your remaining cheese on top and enjoy!
