Directions:
- Preheat the oven to 425 degrees. Heat 1 Tbsp olive oil in an oven proof skillet over a medium-high heat. Add 1 ½ cups diced onion and cook, stirring, until softened, about 3 minutes. Add 2 cloves (or 2 tsp jarred) minced garlic and cook for 1 minute. Next add two 14.5-ounce cans of no salt added diced tomatoes and bring to a boil. Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken. Remove from the heat. Stir in ¼ cups fresh parsley(or 2 tbsp dried), 1 tsp fresh(1/2 tsp dried) dill, and 1 -1/4 lbs shrimp. Season with salt and pepper to taste. Sprinkle 2/3 cup feta over the top. Bake until the shrimp are cooked through and cheese melts, about 12 minutes. Serve over or with a side of brown rice to complete the meal.
Note: If you don’t have an oven proof skillet, you can transfer the tomato mixture into an oven safe dish, mix in the other ingredients and then bake.
